Toasted Oat Energy Bars

Ingredients
The Base:

150g (5.3 oz) toasted oats

200g (7 oz) roasted peanut paste (or natural peanut butter)

60g (2 oz) mixed nuts (almonds, walnuts, hazelnuts), roughly chopped

60g (2 oz) raisins

30g (1 oz) dried cranberries, chopped

1 pinch of salt

Spices to taste (cinnamon, nutmeg, or vanilla powder)
The Topping:

Melted dark chocolate (for decoration or coating)

Optional: Frozen cherries, pumpkin seeds, or dried oranges for serving
Instructions

Mix the Dry Ingredients: In a large bowl, combine the toasted oats, chopped mixed nuts, raisins, dried cranberries, salt, and spices.

Bind with Peanut Paste: Add the roasted peanut paste to the dry mixture. Stir vigorously until the oats are completely coated and the mixture holds together when pressed.

Mold the Bars: Press the mixture firmly into a silicone muffin tin or a parchment-lined square pan. Ensure the surface is flat and even.

Add Chocolate: Pour the melted dark chocolate over the top of each oat base. Smooth it out and sprinkle with optional pumpkin seeds or crushed nuts for extra texture.

Set: Place the tray in the refrigerator for at least 1 hour (or the freezer for 20 minutes) until the chocolate has completely hardened.

Serve: Pop the bars out of the mold and serve chilled.
