🛒 Ingredients
For the Dough:
-
6 cups all-purpose flour
-
3 cups cold milk
-
1½ teaspoons salt
For Brushing Between Layers:
-
150 g butter, melted
-
1 small tea glass vegetable oil (mixed with the melted butter)
For Cooking:
-
A few drops of vegetable oil (for brushing while cooking)
👨🍳 Instructions
1️⃣ Prepare the Dough
Add the flour, salt, and cold milk to a large mixing bowl. Knead until you get a soft, smooth dough. Cover and let the dough rest for 5 minutes.
2️⃣ Divide and Layer
Divide the rested dough into 14 equal balls.
Roll out the first ball thinly on a floured surface. Brush it generously with the butter–oil mixture and fold as shown in the method.
Roll out the second dough ball, brush it with the butter mixture, then place the first folded dough in the center of the second one. Fold the bottom dough over it and set aside.
Repeat this process with all dough balls. You will end up with 7 layered katmers.
3️⃣ Rolling and Cooking
Roll each prepared katmer into a square shape using a rolling pin.
Place it on a hot skillet or pan. When one side lightly cooks, flip it and brush with oil.
Flip again, brush the other side, and cook by turning until both sides are evenly golden brown. Make sure the edges are well cooked.
🌟 Tips
-
Always knead the dough with milk for a softer texture.
-
Don’t forget to brush both sides with oil while cooking.
-
Cook slowly, turning often, so the edges cook through and stay flaky.
