This plate is straight fuel goals—juicy grilled chicken, hard-boiled eggs, crisp veggies, and a drizzle of creamy sauce bringing it all together. It’s colorful, balanced, and perfect for meal prep or a clean dinner that still hits hard.
Protein
1 grilled chicken breast (seasoned & sliced)
2 hard-boiled eggs
Veggie Rainbow
1/2 cup green beans
1/4 cup green peas
1/4 cup edamame
1/4 cup shredded carrots
1/4 cup sweet corn
1/4 cup pickled red onions
1/2 cup cucumber slices
1/2 cup cauliflower florets (roasted or air-fried)
Sauce (light drizzle)
2 tbsp Greek yogurt or light mayo
1 tsp mustard
1 tsp lemon juice
Salt & pepper to taste
Seasoning
Olive oil
Salt, black pepper, paprika, garlic powder
Cook the Chicken
Season chicken with olive oil, salt, pepper, paprika, and garlic powder. Grill or pan-sear 5–6 minutes per side until golden and cooked through. Rest, then slice.
Prep the Veggies
Steam green beans, peas, and edamame until tender-crisp.
Roast or air-fry cauliflower with olive oil, salt, and pepper until lightly charred.
Keep carrots raw for crunch and brightness.
Boil the Eggs
Boil eggs for 9–10 minutes, cool, peel, and leave whole.
Mix the Sauce
Stir yogurt (or mayo), mustard, lemon juice, salt, and pepper until smooth.
Assemble the Plate
Arrange everything in sections: chicken, eggs, corn, carrots, greens, cauliflower, cucumbers, and pickled onions. Lightly drizzle sauce over the veggies—don’t drown it.
