1 medium zucchini (grated)

1 medium carrot (grated)

1/2 onion (finely chopped)

1 tbsp olive oil (for sautéing)

Prep the Zucchini: Grate the zucchini into a bowl. Sprinkle with a pinch of salt and let it sit for about 5 minutes. Use your hands or a clean kitchen towel to squeeze out the excess water. This is the secret to preventing a soggy breakfast!

Sauté the Aromatics: Heat the olive oil in a non-stick skillet over medium heat. Add the chopped onion and grated carrot. Sauté for about 3–4 minutes until they begin to soften.

Add the Zucchini: Add the squeezed zucchini to the pan. Sauté for another 3 minutes until the zucchini is tender and slightly golden.

Prepare the Eggs: In a small bowl, whisk the 4 eggs with 1/2 tsp salt and black pepper. Stir in half of the chopped green onions.

Cook the Scramble: Pour the egg mixture over the vegetables in the skillet. Let it sit for 30 seconds to set slightly, then gently stir with a spatula. Continue cooking until the eggs are just set and fluffy.
